My Mother’s Recipe!
Onions Stuffed With Mushrooms And Yellow Cheese !!!
This recipe comes from the Turkish cuisine, although it could be easily found elsewhere.
It is prepared in many other ways, depends on the recipe itself.
This is the way I prepare it:
-8 large bulbs of onion
-500 gr. of mushrooms
-100gr. of smoked bacon
-150gr. of tomato paste
-200gr. cubes of yellow cheese
-8 slices of yellow cheese
-100gr. cream cheese
-2 tablespoons of sour cream
– parsley (optional)
– mixed dried vegetables
– salt and black peppers
Remove the core of the onions and put them away to trickle. Then, cut the core into small pieces.
Cut the carrot into small cubes and fry it with cooking oil along with the onions, until it turns golden yellow.
Add the bacon and mushrooms when it fries well, and put the tomato paste, the parsley, the dried vegetables, salt and black pepper.
After this mixture fries and cools well, add the cubes of yellow cheese and the cream cheese. Mix it until you get consistent mixture and then stuff the onions.
Put some slices of yellow cheese after you stuff the onion, and arrange it into the bowl into which the ingredients were fried previously.
Pour about ½ litre of water and roast it into an oven at 200 degrees Celsius for half an hour.
Whisk two eggs into a bowl with sour cream. Pour the eggs when the mixture is ready and put it back into the oven to roast for additional 5 or 10 minutes.
