I found this recipe a year ago, and it quickly became one of my favorite desserts recipes I often use to prepare.

500 gr. flour
375 gr. brown sugar
125 gr. cocoa
125 gr. cooking oil
2 cups grated zucchini
1 teaspoon sodium bicarbonate
Preparation – Healthy Recipes For Brownies :
The first step in this preparation is that you peel and grate the zucchini, and then you put aside for approximately half an hour.
Squeeze zucchini well after it is left for a while, so that it releases the juice it contains.
Mix all dry ingredients aside – the flour, brown sugar, cocoa, sodium bicarbonate and salt.
Then, add both cooking oil and vanilla extract into zucchini.
Stir it well, and add it to the dry ingredients you’ve already prepared.
The entire mixture is mixed again so that it conjoins into a consistent mixture.
Grease baking tray with some cooking oil, and cover it with a baking paper so that brownies do not stick onto the tray while baking.
Bake it at approximately 45 minutes.
Check occasionally whether it is baked well using toothpick, so if toothpick is dry the brownies are ready to serve.
At the end I would recommend that this mixture that is prepared into a baking tray, can also be used for perfect muffins preparation.
