Healthy lentil soup is ideal choice when you want to eat something healthy but at the same time tasty.

Lentils have a high nutritional value and provides lot of health benefits: help to reduce blood cholesterol, controls diabetes, prevents atherosclerosis etc.

Healthy Lentil Soup

Ingredients for healthy lentil soup:

500 gr. lentils

5-6 cloves garlic

1 onion

5 tablespoons olive oil

black pepper

1 teaspoon paprika

2 medium chopped potatoes

1 carrot

salt

1/2 teaspoon dry oregano

1 tbsp vinegar

parsley

Preparation of healthy lentil soup:

First, put lentils into a cooking pan, add olive oil, garlic, finely chopped onions, carrot and potatoes, and pour enough water-at least 3-4 inches above the top of the lentils.

Cook until lentils are tender, 1/2 or maybe 1 hour over low heat (this depends of types of lentils) .

Take a few tablespoons of the lentils and crush them into a paste with the back of a spoon if the soup needs thickening.

During the preparation, add salt, black pepper, paprika, oregano and vinegar.

Remove from heat and serve garnished with a generous sprinkling of fresh parsley .
